We’re proud to introduce our one-of-a-kind Native Damper Mix, making it easier to bring bushtucker into your everyday cooking. This special blend combines our traditional Aboriginal grains Mitchell Grass and Button Grass- from Black Duck Foods with our signature damper mix, creating a unique and authentic taste of Country.
Honouring Our Aboriginal Food Knowledge
Our people have been harvesting and grinding native grains for thousands of years, making some of the oldest known breads in the world. The Mitchell Grass and Button Grass flours in this mix bring a mild, nutty flavour with earthy undertones, connecting us to the traditional foods our ancestors have used for generations.
Damper Recipe & Cooking Guide
Ingredients:
- 2 cups self-raising flour
- 1/2 tsp salt
- 1 cup water (or milk for a richer texture
- 1 tbsp butter (optional, for a softer result)
Instructions:
1. Preheat your oven to 200°C (390°F) or prepare hot coals for fire cooking.
2. Combine dry ingredients in a bowl. If using butter, rub it in before adding liquid.
3. Add liquid slowly and mix until a soft dough forms.
4. Knead lightly on a floured surface for about 1 minute until just combined. Over-kneading can make the damper dense.
5. Shape into a round loaf, place on a baking tray, and score the top.
6. Bake in the oven for 25-30 minutes, or cook in foil over coals for 20-25 minutes, turning occasionally.
7. Serve warm with butter, bush honey, or your favourite spread!
