We're excited to bring you our new Native Damper Mix, featuring three unique and delicious flavours: Lemon Myrtle, Saltbush, and Wattleseed. Aboriginal people have been making bread for thousands of years from a range of native grains and our traditional flavours.

Perfect for a traditional Australian treat or addition to your meal with a native twist!

This mix is designed to serve four people, making it a great option for family meals, picnics, or a unique addition to any gathering. Here's what you can expect from each of the distinctive flavors:

**🌿 Lemon Myrtle:**
Enjoy the zesty, citrusy aroma of Lemon Myrtle, which adds a refreshing brightness to your damper. This native herb brings a delicate lemon fragrance with subtle floral notes, making each bite both vibrant and uplifting.

**🌿 Saltbush:**
Saltbush offers a slightly salty and savory flavor, bringing a taste reminiscent of the Australian bush. It’s a great balance to the richness of the damper, adding a hint of umami that perfectly complements its light, fluffy texture.

**🌿 Wattleseed:**

Damper Recipe & Cooking Guide (For First-Time Cooks)

Ingredients:
- 2 cups self-raising flour
- ½ tsp salt
- mix in your flavour
- 1 cup water (or milk for a richer damper)
- 1 tbsp butter (optional, for a softer texture)

**Instructions:**

1. Preheat your oven

To 200°C (390°F). If you’re cooking over a fire, ensure your coals are hot and ready.

2. Combine the dry ingredients

In a large bowl, mix together the self-raising flour, salt, Lemon Myrtle, Saltbush, and Wattleseed.

3. Add liquid

Slowly pour in the water (or milk) and mix until a soft dough forms. If you’re using butter, rub it into the dry ingredients before adding the liquid for a more tender result.

4. Knead the dough

On a floured surface, gently knead the dough for about 2 minutes until smooth. Be careful not to overwork it, as damper is best when light and fluffy.

5. Shape the damper

Form the dough into a round loaf and place it on a baking tray lined with parchment paper. Score the top with a knife to help it cook evenly.

6. Cook
In the oven: Bake for 25-30 minutes, or until the damper is golden brown and sounds hollow when tapped on the bottom.
Over the fire: Wrap the damper in foil and place it directly on the hot coals. Cook for 20-25 minutes, turning occasionally for even cooking.

7. Serve Let the damper cool slightly before serving. Enjoy it warm with butter, bush honey, or your favorite spread!
